chicken and escarole, tomato tart, pasta alla norma

Latest culinary obsession=New York Times Cooking. To be more specific, Alison Roman

First up, this chicken and escarole salad. A slightly Asian take on caesar dressing due to the soy sauce, this salad is salty, crunchy and delicious.

Next up, this roasted tomato tart. I will say that it turned out tasty and pretty, but it was a bit of a crumbly mess. I also asked myself, what is the difference between a tomato tart and a pizza? Open to any and all thoughts on that one….

Lastly, big fan of this pasta alla norma sorta. There’s nothing I love more than a hearty bowl of pasta. A twist on classic tomato sauce that includes shallots, and eggplant, the only thing that could top that off perfectly is some crispy prosciutto and fresh parmesan. Plus, lots of leftovers for meal prep!
